在技工院校中,烹饪专业遇到最大的困难是实习耗材太大,因此学校觉得该专业的学生招得越多,亏损越大。通过模拟对内经营,采用“一体化职业体验式”教学模式,既能提升学生学习兴趣,又能提升学生操作技能和管理技能,还能让学生学以致用。这样既可以解决学生实习材料的经费问题,又可以培养适合企业岗位要求的人才,使教学与企业生产无缝对接成为现实。就“一体化职业体验式”教学法在烹饪实习教学中的实践运用进行了探讨。
Among the mechanics and technical colleges, the biggest difficulty encountered by the culinary profession is that the consumables are too large. Therefore, the schools think that the more students the major recruit, the greater the losses. By simulating internal management, the “integrated professional experience” teaching mode can not only enhance students ’interest in learning, but also enhance students’ operational skills and management skills, as well as enable students to apply their knowledge effectively. This will not only solve the financial problems of students’ internship materials, but also train qualified personnel for the job requirements so that the seamless connection between teaching and production becomes a reality. The practice and application of “integrated professional experience” teaching method in cooking practice teaching were discussed.
