油菜籽有三种主要的硫代葡萄糖甙,即3—丁烯基硫代葡萄糖甙,4—戊烯基硫代葡萄糖甙,2—羟基—3丁烯基硫代葡萄糖甙。这些化合物靠芥子酶水解,分别产生3—丁烯基异硫氢酸盐(BI),4—戊烯基异硫氢酸盐(PI)和5—乙烯基—2噁唑烷硫酮(OZT)。硫代葡萄糖甙和他们的水解产物会降低菜籽饼的家畜食用价值。目前,由于以IIC和OZT的形式定量测定硫代葡萄糖甙,所以菜饼中的硫代葡萄糖甙被认为是它们的水解产物。本项研究提供了成熟种子中这些化合物存在的基础资料。
Rapeseed has three major glucosinolates, namely 3-butenyl glucosinolate, 4-pentenyl glucosinolate, 2-hydroxy-3 butenyl glucosinolate. These compounds are hydrolyzed by a mustardase to produce 3-butenyl isothiocyanate (BI), 4-pentenyl isothiocyanate (PI) and 5-vinyl-2 oxazolidinethione (OZT ). Glucosinolates and their hydrolysates reduce the value of livestock products for rapeseed cakes. Currently, glucosinolates in vegetable cakes are considered as their hydrolysates due to the quantitative determination of glucosinolates in the form of IIC and OZT. This study provides the basic information on the presence of these compounds in mature seeds.
