流态化冻结装置由于具有冻结速度快,产品质量好和易于实现机械化连续生产等优点,已成为近年来各个蔬菜冻结加工厂最广泛应用的一种速冻装置。本文围绕如何实现流化床的气流均匀性,避免颗粒食品冻粘成团和提高冻结装置经济性等几个设计关键问题,从合理确定临界流化速度,筛网和食品层的压力降,蒸发器及除霜系统设计及隔热围护厚度等方面进行了探讨,并就发展国产流态化冻结装置的结构型式提出了初步设想。
Because of its advantages of fast freezing speed, good product quality and easy mechanization and continuous production, the fluidized freezing device has become the most widely used quick-freezing device for freezing processing plants of various vegetables in recent years. In this paper, we focus on several key design issues, such as how to achieve the uniformity of airflow in the fluidized bed, prevent the pellets from freezing and sticking and improve the economy of the freezing device. From the reasonable determination of critical fluidization velocity, pressure drop of the sieve and food layer, The design of the defrosting system and the thickness of the thermal insulation and so on. It also puts forward the tentative plan for the development of the structure type of the domestic fluidized freezing device.
