以云南省大面积推广品种为材料 ,通过对三个不同生态试点、水、旱地栽培条件下小麦品质变化的分析 ,初步研究了低纬高原立体气候生态条件与小麦品质的关系。结果表明 ,蛋白质和湿面筋含量受生态环境与栽培条件的影响 ;出粉率同时受生态环境和品种遗传的影响 ;沉淀值主要受品种遗传特性的控制 ;面团流变学特性主要由品种遗传特性所决定 ,但也受生态环境、栽培方式、生态环境与栽培方式互作的影响。
Based on the large-scale popularization of Yunnan province, the relationship between the three-dimensional climate and the quality of wheat in the low latitude plateau was studied by analyzing the changes of wheat quality under three different ecological experiments, water and dry land cultivation. The results showed that the contents of protein and wet gluten were affected by the ecological environment and cultivation conditions. The yield of flour was affected by both the ecological environment and the genetic variation of the cultivars. The sedimentation value was mainly controlled by the genetic characteristics of the cultivars. The rheological properties of the dough were mainly determined by the genetic characteristics But also by the ecological environment, cultivation methods, ecological environment and cultivation methods of interaction.
