目前,餐具消毒方法的种类增多,为了解常用的消毒方法对细菌。大肠菌群的杀灭效果,我们于1995~1996年对本区部分饭店、宾馆、饮食店进行了调查。1 材料与方法 对虹口区的30家饭店、宾馆、饮食店的餐具消毒过程、消毒方法、消毒时间、保洁方法进行调查,对消毒前、后,保洁柜内隔夜餐具参照卫生部食(餐)具消毒卫生标准进行采样,检测其细菌总数和大肠菌群消长情况。
