泉州市两种即食面制品铝污染状况调查

目的了解泉州市两种即食面制品油条和馒头铝污染状况,为监督管理提供依据。方法在学校食堂、加工店(摊)及超市等采样抽检,检测铝污染情况。结果 2011年抽检油条和馒头共计41份样品,21份铝超标,超标率为51.2%;其中油条20份,超标16份,超标率为80%;馒头21份,超标5份,超标率为23.8%。结论泉州市两种即食面制品的铝污染状况比较突出,油条的污染尤为严重,应加强面制品加工环节膨松剂使用的监管,保证面制品的食用安全。 Objective To understand the contamination status of two kinds of instant noodle fritters and steamed bread in Quanzhou and provide the basis for supervision and management. Methods Sampling in the school canteens, processing shops (stalls) and supermarkets was conducted to test the aluminum pollution. Results A total of 41 samples of fried dough sticks and steamed bread were inspected in 2011. The exceeding standard rate was 51.2%. Among them, 20 were fried dough sticks exceeding the standard of 16 and the exceeding standard rate was 80% %. Conclusion The two kinds of instant noodle products in Quanzhou City, the status of aluminum pollution is more prominent, fried dough sticks is particularly serious pollution should be strengthened in the processing of surface area leavening agent regulation to ensure the food safety of noodles.
