在对省内外24家瓜子厂卫生学调查基础上抽取了46份黑瓜子样品进行检验。通过研究,提出黑瓜子卫生标准的建议值。感官指标:全瓜子或瓜仁应具有各品种的正常色泽、独特气味和滋味。不得有酸败、发霉等异味和杂质。瓜子内外不得有霉变、生虫。理化指标:水份≤10.0%,铅≤0.5mg/kg,砷≤0.5mg/kg,过氧化值≤0.25%,酸价≤5,羰基价≤20meq/kg;黄曲霉毒素B1≤5μg/kg;糖精钠≤0.30g/kg;其它食品添加剂按GB2760-86(糖果糕点)规定。细菌指标:细菌总数≤400个/克,大肠菌群≤30个/100克,致病菌(肠道致病菌及致病性球菌)不得检出。
On the basis of the survey of hygiene of 24 melon seeds factories in and outside the province, 46 samples of black melon seeds were taken for testing. Physical and chemical indicators: water ≤ 10.0%, lead ≤ 0.5mg / kg, arsenic ≤ 0.5mg / kg, peroxide value ≤ 0.25%, acid value ≤ 5, carbonyl value ≤ 20meq / kg; Toxins B1 ≤ 5μg / kg; sodium saccharin ≤ 0.30g / kg; other food additives according to GB2760-86 (confectionery) provisions. Bacteria indicators: the total number of bacteria ≤ 400 / g, coliform ≤ 30/100 grams, pathogens (intestinal pathogens and pathogenic cocci) shall not be detected.
