Dunaliella is a species of microalgae that grows in seawater. Its intracellular beta-carotene content is several thousand times that of carrot cells. Salt production is the first time in China that natural food pigment rich in β-carotene has been extracted from Dunaliella salina; this extract is a fat-soluble mixture, collectively called Ex-tracts of Dunaliella Salina (EDS), which contains β
