为了解不同品种特种玉米的品质差异性,以糯玉米、爆裂玉米和普通玉米为原料,对其玉米籽粒物理特性和糊化特性进行分析。结果表明:与普通玉米相比,糯玉米具有较低的硬度、糊化温度及回生值,较高的籽粒密度和容重,冷糊稳定性较好,不宜老化;而爆裂玉米的籽粒密度、硬度以及容重高于糯玉米和普通玉米,糊化温度较高,峰值黏度、最低黏度、破损值较低,热糊稳定性好。
In order to understand the quality difference of different varieties of special maize, waxy corn, popcorn and common maize were used as raw materials to analyze their maize grain physical characteristics and gelatinization characteristics. The results showed that waxy corn had lower hardness, gelatinization temperature and freshness value, higher kernel density and bulk density, better stability than cold corn, and should not be aged. However, the kernel density, hardness And the bulk density is higher than waxy corn and ordinary corn, the gelatinization temperature is higher, the peak viscosity, the lowest viscosity, the damage value is lower, the hot paste stability is good.
