目的掌握新疆木垒哈萨克自治县餐具消毒卫生状况,为餐饮业卫生监督提供科学依据。方法采用大肠菌群纸片法,按国家规定的检测方法进行检测。结果总合格率63.43%,不同规模餐饮业中,乡镇各类餐馆的合格率较低,学校食堂的合格率较高;不同类型餐具合格率不同,杯类和碗类的合格率较高,碟类和盘类的合格率较低。结论应加强餐饮业消毒监督监测管理,采取有效措施提高餐具消毒质量。
Objective To master the sanitation status of utensils in Muzi Kazakh Autonomous County of Xinjiang and provide a scientific basis for health supervision of catering industry. Methods Coliform bacteria paper method, according to the provisions of national testing methods for testing. The results of the total pass rate of 63.43%, catering industry in different sizes, the township of various types of restaurants with a lower pass rate, high school canteens pass rate; different types of tableware pass rate, cups and bowls with a higher pass rate, dish Qualification rate of the class and disk type is lower. Conclusion It is necessary to strengthen supervision and monitoring of the sterilization of catering industry and take effective measures to improve the quality of tableware disinfection.
