某大学在野游后发生了腹泻病暴发。通过流行病学调查、环境调查及实验室检测后确定为产腹泻毒素的蜡样芽胞杆菌食物中毒。发病率为22%。致病食物为烧烤猪肉,烤肉中蜡样芽胞杆菌含量>10~5cfu/g,且用ELISA法从检样中检出蜡样芽胞杆菌腹泻毒素。中毒原因是厨房卫生状况不好,在食品准备间宰杀动物;在表面粗糙不平且已缩裂的屠宰工作台上加工生、熟食品;食物储藏不当,剔骨后的猪肉放在地上未冷藏放置达18h以上;熏烤时加热不够,没能保持121℃以足够的时间。这些均为细菌污染、繁殖、产毒提供了
