导读:法国人的优雅浪漫举世闻名,法式大餐则以其细腻、高贵、富于变幻的特质同样享誉全球。然而.在全球化浪潮的冲击下,在追求数量不求质量,着重模式化忽视个性化的大批量生产中,选料精细、烹调讲究的法式烹饪逐渐受到了冷遇。此外,法国政府的官僚作风、苛捐杂税,欧盟的统一政策等都制约了传统餐饮业的发展。作为法国风情和世界美食文化代表之一的法式烹饪,它的衰落无疑是法国乃至整个世界的遗憾。本文的两位作者运用直率犀利而不失诙谐的语言,一针见血地剖析了导致法式烹饪衰落的主客观原因,同时也引发我们思考一个带有普遍意义的命题:如何在不可逆转的全球化的背景下保持和发展本国的传统工业及文化特色。
Introduction: French people are known for their elegance and romance. French cuisine is also known around the world for its delicate, noble and varied qualities. However, under the impact of the globalization wave, in the mass production that pursues quantity without quality, and with emphasis on patternization and neglect of individualization, the French cuisine with fine choice of ingredients and exquisite cuisine has gradually become cold. In addition, the French government’s bureaucratic style, harsh taxes, and the EU’s unified policies have all constrained the development of the traditional catering industry. As French cuisine, one of the representatives of French style and world food culture, its decline is undoubtedly the regret of France and even the whole world. The authors of this article use straightforward, yet humorous language to analyze the subjective and objective causes leading to the decline of French cooking. At the same time, they also lead us to think of a proposition with universal significance: how to deal with the background of irreversible globalization. Maintain and develop the traditional industry and cultural characteristics of the country.
