Tannins containing catechins are an extremely unstable compound not only in tea but also in other plants. More than once it has been demonstrated that the content of tannin varies depending on the crop’s growth conditions. It has been demonstrated that the content of tannin in tea leaves significantly decreases with the advancing northward of the tea tree. However, there is a lack of information in the literature on the impact of geographical elements on the changes in tea catechins.
