目前市场上所售牛奶掺假兑水现象普遍而又严重。掺假已有比较好的检测手段和方法;而掺水量的检查虽说也有不少单位做了大量研究工作,然而至今还未见到能现场快速测定奶中掺水量的理想方法。为满足食品监督人员的需要,打击不法商贩,保障人民健康,最近我们根据物理学“光的折射”之原理,进行了“用手持糖量计测定牛奶中掺水百分含量”的试验研究工作,并取得了比较理想的结果。现将其实验原理和测定方法报告如下:
