目的应用《生活饮用水标准检验方法》(水质法)测定面制食品中铝并与《食品卫生检验方法》(食品法)进行比较。方法铬天青S分光光度法,参照GB/T 5750.6-2006《生活饮用水标准检验方法—金属指标》和GB/T 5009.182-2003《食品卫生检验方法理化部分(二)》有关规定进行。结果 2种方法具有良好的相关性,准确度和精密度一致,稳定性好,所测得的结果,经比较差异无统计学意义。结论水质法更具有试剂用量少、缓冲系统抗酸能力强、显示的颜色更稳定等优点,适用于面制食品中铝测定。
Objective To determine the content of aluminum in flour food by the “Standard Test Method for Domestic Drinking Water” (water quality method) and compare with “Food hygiene inspection method” (Food Law). Methods Chromazurol S spectrophotometry, with reference to GB / T 5750.6-2006 “drinking water standard test method - metal indicators” and GB / T 5009.182-2003 “food hygiene test method of physical and chemical part (b)” the relevant provisions. Results The two methods had good correlation, the accuracy and precision were consistent, and the stability was good. The measured results were not statistically significant after the comparison. Conclusion The water quality method has the advantages of less reagent dosage, strong acid-fast buffering system and more stable display color, which is suitable for aluminum determination in flour food.
