研究明胶的官能团对物理抑制性的影响。官能团因明胶的化学改性发生了变化,即酰胺化反应使羧基减少,苯氨基甲酰化、邻羧基苯酰化、邻对二羧基苯酰化使氨基减少,羧基增加。 物理抑制度随酰胺化比率上升(羧基减少)而升高,随羧基增加而降低。随着由于苯氨基甲酰化引起的氨基减少,物理抑制度还显出了少许的上升。钙离子的物理抑制作用也随此发生了变化。
The effect of gelatin functional groups on physical inhibition was investigated. Functional groups changed due to the chemical modification of gelatin, that is, the amidation reaction reduced the carboxyl group, carbamoylated, ortho-carboxyl benzylated, and para-dicarboxybenzoylated reduced the amino group and increased the carboxyl group. The degree of physical inhibition increases with the amidation ratio (decrease of carboxyl groups), and decreases with the increase of carboxyl groups. Physical inhibition also showed a slight increase with decreasing amino groups due to phenylcarbamoylation. The physical inhibition of calcium ions also changed.
