为掌握天津经济技术开发区餐饮业餐具消毒质量,依据GB 14934-1994《食(饮)具消毒卫生标准》对2007—2010年区内不同类别餐饮业不同季节的消毒后餐具现场随机抽样5%~10%,采用大肠菌群快速检验纸片法进行了消毒效果监测评价。结果显示四年间检测各类餐饮具2 622份,总合格率为84.40%,其中2008年最高(88.89%),2009年最低(78.91%)。餐馆、宾馆、托幼单位和学校及企业单位食堂四类不同的餐饮单位中,宾馆餐具消毒质量较高(89.79%),托幼单位和学校最差(81.05%)。夏秋季节消毒的合格率较低。结果提示,应加强托幼单位和学校的餐具消毒工作,且夏秋季节应加强监督力度。
In order to grasp the disinfection quality of catering tableware in Tianjin Economic and Technological Development Zone, according to GB 14934-1994 “food (drinking) with disinfection health standards” on the scene of different types of catering industry in 2007-2010 different season post-disinfection tableware random sampling 5% ~ 10%, using coliform rapid test method of paper disinfection monitoring and evaluation. The results showed that during the four years, 2 622 pieces of tableware were tested, with a total pass rate of 84.40%, the highest in 2008 (88.89%) and the lowest in 2009 (78.91%). Among the four different catering units in restaurants, hotels, nurseries, kindergartens and canteens in schools and enterprises, the disinfection quality of tableware in hotels was high (89.79%), and the worst among nurseries and kindergartens (81.05%). Summer and autumn disinfection pass rate is low. The results suggest that should be strengthened kindergarten units and school tableware disinfection work, and the summer and autumn should strengthen supervision.
