采用酶法水解文庆鲤制备具有抑制血管紧张素转换酶(ACE)活性的水解液。以ACE抑制率为评价指标,用胃蛋白酶、枯草杆菌中性蛋白酶、木瓜蛋白酶及胰酶分别水解文庆鲤,四种水解液中抑制ACE效果最好的为胃蛋白酶水解液。正交试验确定胃蛋白酶最佳水解条件为:pH2.0、酶浓度4%、水解6.0h、底物浓度8%。在该条件下水解,ACE抑制率可达85.74%。
Hydrolyzate with inhibiting activity of angiotensin converting enzyme (ACE) was prepared by enzymatic hydrolysis of Wenqing carp. ACE inhibitory rate as the evaluation index, pepsin, Bacillus subtilis neutral protease, papain and pancreatin were respectively used to hydrolyze Wenqing carp, and the best inhibition effect of ACE in the four hydrolysates was pepsin hydrolyzate. Orthogonal test to determine the optimum conditions for the hydrolysis of pepsin: pH2.0, 4% enzyme concentration, hydrolysis 6.0h, substrate concentration 8%. Under the conditions of hydrolysis, ACE inhibition rate up to 85.74%.
