研究多花黄精提取物对金冠苹果防腐保鲜的效果,测定其对果实的腐烂率、失水率、可滴定酸含量、Vc含量、可溶性糖含量、过氧化物酶(peroxidase,POD)活性以及丙二醛含量等生理生化指标的影响。结果表明,质量浓度为12.5 g·L-1的多花黄精提取物对供试苹果进行浸泡处理,(24.0±2.0)℃条件下贮藏21 d后,果实的腐烂率比对照组降低了33.3%,可滴定酸、可溶性糖和Vc含量分别为0.190%、109.6 mg·g-1和3.7 mg·100 g-1,比对照组分别提高了4.4%、22.7%和105.6%;果实中丙二醛含量(MDA)的积累显著降低,并保持较高的POD活性,保鲜效果较佳。
The effects of the extract of Polygonatum sibiricum on preservation of Golden Delicious apple were studied. The decay rate, water loss rate, titratable acidity, Vc content, soluble sugar content, peroxidase (POD) activity, Dialdehyde content and other physiological and biochemical indicators. The results showed that the extract of Pistacia chinense with quality concentration of 12.5 g · L-1 was soaked in apple (P <0.05) that the decay rate of fruit was 33.3% lower than that of the control after 21 d storage at (24.0 ± 2.0) ℃ , Titratable acidity, soluble sugar content and Vc content were 0.190%, 109.6 mg · g-1 and 3.7 mg · 100 g-1, respectively, which were 4.4%, 22.7% and 105.6% The content of MDA decreased significantly and the activity of POD was kept higher with better preservation effect.
