目的:了解浙江省杭州市本地食品中铅、镉、汞、铝、砷等重金属污染现状。方法:参照建立全国食品污染物监测系统和全球食品污染物监测规划(GEMS/FOOD)中推荐监测项目,对杭州地区销售的食品包括原粮、果蔬、畜禽产品、水产品等四大类40种122份食品等进行了铅、镉、汞的监测,对糕点、油条、面制品进行铝含量监测,对猪肉进行砷含量监测。结果:2007年杭州市本地食品中铅、镉、汞、铝、砷的检出率分别是56.56%(69/122)、90.98%(111/122)、81.97%(100/122)、84.00%(21/25)和100.00%(10/10),GB总超标率分别为4.10%(5/122)、7.38%(9/122)、9.02%(11/122)、32.00%(8/25)、0.00%(0/10)。结论:要进一步加强食品重金属污染监测力度,以便政府能及时了解食品的污染动态。
Objective: To understand the status of heavy metal pollution in local foods such as lead, cadmium, mercury, aluminum and arsenic in Hangzhou, Zhejiang Province. Methods: With reference to the establishment of the national monitoring system for food contaminants and the recommended monitoring items in the Global Food Contaminants Monitoring Program (GEMS / FOOD), 40 kinds of foods sold in Hangzhou, including raw grains, fruits and vegetables, livestock and poultry products and aquatic products, 122 foodstuffs were monitored for lead, cadmium and mercury, aluminum contents of cakes, dough sticks and flour products were monitored, and the arsenic content of pork was monitored. Results: The detection rates of lead, cadmium, mercury, aluminum and arsenic in local foods in 2007 were 56.56% (69/122), 90.98% (111/122), 81.97% (100/122) and 84.00% (21/25) and 100.00% (10/10) respectively. The total GB exceeded the standard rates of 4.10% (5/122), 7.38% (9/122), 9.02% (11/122), 32.00% (8/25) ), 0.00% (0/10). Conclusion: To further strengthen the monitoring of heavy metal contamination in food so that the government can keep abreast of food contamination.
