2012年安阳市食品中食源性致病菌污染状况检测及结果分析

目的了解安阳市食品中食源性致病菌的污染情况,为食品安全风险评估提供依据。方法采集安阳市8大类324件食品,依据国家标准GB4789-2010,检测沙门菌、志贺菌、大肠埃希菌O157:H7、单核细胞增生李斯特菌、金黄色葡萄球菌、蜡样芽孢杆菌和阪崎肠杆菌7种致病菌。结果检测样品324份,检出致病菌41株,总检出率为12.65%。在7种致病菌中,以蜡样芽孢杆菌检出率为最高(7.72%),其次是金黄色葡萄球菌(2.78%)和单增李斯特菌(1.54%),沙门菌为0.62%。结论安阳市居民主要消费食品存在食源性致病菌污染,监督部门应提供有效的监管措施,避免食源性食物中毒的发生。 Objective To understand the contamination of food-borne pathogenic bacteria in food in Anyang City and provide the basis for food safety risk assessment. Methods A total of 324 foodstuffs from 8 major categories in Anyang were collected and tested for Salmonella, Shigella, Escherichia coli O157: H7, Listeria monocytogenes, Staphylococcus aureus and Bacillus cereus according to the national standard GB4789-2010. Bacillus and Enterobacter sakazakii seven kinds of pathogens. Results A total of 324 samples were tested and 41 pathogenic bacteria were detected, with a total detection rate of 12.65%. Among the seven pathogens, the highest detection rate was Bacillus cereus (7.72%), followed by Staphylococcus aureus (2.78%) and Listeria monocytogenes (1.54%), Salmonella was 0.62%. Conclusion Anyang City, the main consumer food consumption of food-borne pathogens contamination, supervision departments should provide effective regulatory measures to avoid food-borne food poisoning.
