调查上海某区食品生产企业制定食品安全企业标准现状,分析问题和对策。方法采取文献回顾、专家评审、问卷调查等方法。结果34家企业首次提交的52件企业标准均存在问题,其中理化指标设置不符合要求、微生物指标设置不符合要求等问题发生率分别为61.54%、48.08%;是否组织专家对企业标准进行审查对关键问题发生率、3个及以上重要问题发生率有影响,x~2=4.205(P<0.05),x~2=5.507(P<0.025)。结论食品生产企业应加强对企业标准制定过程的管理和投入,提高企业标准安全质量。
