春小麦盆栽试验表明,籽粒蛋白质含量与总蛋白中的高分子麦谷蛋白含量之间同籽粒蛋白质含量与总蛋白中的贮藏蛋白之间关系的已知规律具有一定偏离。在籽粒蛋白质很低的情况下(9%-10%),发现总蛋白质中高分子麦谷蛋白含量增加,而在籽粒中蛋白质含量很高时(17%-19%),高分子麦谷蛋白含量降低。矿质肥料对籽粒品质的影响己有很多专题研究报告和综述文章发表。在这些文献中涉及到肥料的不同类型、施肥量和施肥期等对籽粒中蛋白质含量、面包烘烤品质和其它指标的影响。
The spring wheat pot experiment showed that there was a certain deviation from the known law of the relationship between the grain protein content and the high-molecular-weight glutenin content in the total protein between the grain protein content and the storage protein in the total protein. In the case of low grain protein (9% -10%), the content of macromolecule glutenin in total protein was found to be increased, while the content of macromolecule glutenin was decreased in the case of high protein content in grain (17% -19%). The effects of mineral fertilizers on grain quality have been reported in many special studies and review articles. These documents deal with the effects of different types of fertilizers, fertilizers and fertilization periods on the protein content of breads, bread baking quality and other indicators.
