藏红花素是一类天然多糖，存在于藏红花和栀子中，具有抗肿瘤、抗氧化、免疫调节等作用。由于我国栀子来源广泛、资源丰富，故现代多以栀子作为珍稀中药材藏红花的评价替代品为研究原料来提取分离藏红花素。本文归纳了栀子来源藏红花素的提取分离工艺，同时也阐述了其体外抗氧化以及稳定性的测定方法。“,”Saffron is a kind of natural polysaccharide, which exists in Saffron and Gardenia, and has anti-tumor, anti-oxidationrnand immunomodulatory effects.
