为了解《广东省餐饮业食品卫生量化评价表》在现场评价应用中的特异度和稳定性。按照区组设计的方差分析,由5名评分员用《广东省餐饮业食品卫生量化评价表》对选定的5家餐饮业进行评分,以方差分析方法考察不同评分员使用《评价表》的差异。5名评分员对5家企业的平均评分分别为71·48、72·8、77·9、71·76、71·32,评分员间的评分结果经方差分析差异无显著性(P>0·05),组内相关系数R=0·94,说明《广东省餐饮业食品卫生量化评价表》的可靠性较理想,较稳定。5家企业的平均得分分别为92·24、86·02、73·72、63·06、50·58,经检验,差异有显著性(P<0·01),说明《广东省餐饮业食品卫生量化评价表》的准确性较好,能相对准确地区分不同卫生质量水平的评价对象。
In order to understand the “quantitative evaluation of food hygiene in Guangdong Province Food Industry” in the field evaluation of the application of specificity and stability. According to the analysis of variance of the block design, five scoring members scored the selected five catering industries by using “Quantitative Assessment Table for Food Hygiene in Guangdong Catering Industry”, and used variance analysis to examine the use of “Evaluation Table” difference. The average scores of 5 scorers on 5 companies were 71.48, 72.8, 77.9, 71.76, and 71.32, respectively. There was no significant difference between the scorers in the variance analysis (P> 0 · 05), and the correlation coefficient R = 0.94 in the group, indicating that the reliability of the quantitative evaluation table for food hygiene in Guangdong’s catering industry is more ideal and stable. The average scores of the five enterprises were 92.24, 86.02, 73.72, 63.06, 50.58, respectively. The differences were significant (P <0.01), indicating that “the food in Guangdong Province Health Quantification Evaluation Table, ”the accuracy is better, can be relatively accurate distinction between the different health quality evaluation targets.
