在实际调研及结合专家意见的基础上,采用基于三角模糊数的层次分析法对各级指标赋权,建立了高校食堂食品质量安全预警体系,进而结合模糊综合评判法建立高校食堂食品质量安全预警模型。根据实证研究结果得出结论,即购买食材质量、储藏室场地面积、食材加工程序安全情况及餐具卫生情况对马鞍山师范高等专科学校食堂食品质量安全影响程度最大。
Based on the actual investigation and the combination of expert opinion, AHP based on trigonometric fuzzy number is used to empower all levels of indicators to establish the pre-warning system of food quality and safety in the canteens of colleges and universities, and then to establish the pre-warning of food quality and safety of the canteens in the university by combining fuzzy comprehensive evaluation model. According to the results of empirical research, it is concluded that the quality of foodstuffs purchased, the area of storerooms, the safety of food processing procedures and the sanitary condition of tableware have the greatest impact on the food quality and safety of the canteens in Maanshan Teachers College.
