旧时,在四川城市和乡镇的酒菜饭馆内,流行的鸣堂辅餐侍席艺术,是一种深受广大顾客好评的传统服务形式,这种形式,具有独特的内涵和艺术力。它对川菜品式和川菜体系的形成,曾起过推波助澜的作用。今天重新提起,不仅因为它是巴蜀饮食民俗中的一个民俗事象,有重要的认识和研究价值,而且对今天餐饮业的进一步繁荣和发展,也仍有重要的推动作用。对此,笔者撰写专文作过介绍。今就鸣堂的辅餐侍席艺术再作探讨,有不当之处,敬请批评。
In the old days, the popular art of courtroom catering in the Sichuan restaurants and pubs in towns and cities was a traditional form of service well received by the masses of customers. This form has unique connotation and artistic power. Its Sichuan cuisine and the formation of Sichuan system, has played a role in fueling.
