香菇松是由香菇菇柄经过蒸煮、打丝、焙炒等一系列工艺过程生产出的一种新型食物。直接食用菇柄,不仅粗韧难嚼、吞咽困难,而且不利于消化吸收,加工成香菇松后,便成色、香、味俱全的营养佳品。我省的菇柄资源十分丰富,用于出口的袋栽香菇,约占子实体25~(?)5%的菇柄要除掉,才能进入市场。香菇松的研制成功,大大地降低生产成本,提高了栽培的经济效益。
