由食品系魏益民副教授主持的《关中主要小麦品种品质性状的研究》课题于1993年5月22日,由陕西省教委主持在我校通过了鉴定。专家一致认为:该项目在关中小麦品种品质性状研究方面达到了国内先进水平,在基质蛋白质结构研究方面居国际领先水平。 该项研究选用关中及黄淮麦区主要推广品种及部分参加区域试验的品系小偃6号,小偃107,79(1B),N83,83(37)-65为材料,以德国标准强力粉Meneba为对照,采用国际谷物化学协会及德国谷物化学协会分析标准,经过两年多的研究,共取得了3项重要结果:①胚乳栅栏淀粉细胞的数量、糊粉层细胞的质量与小麦籽粒角质率、容重和出粉率具有密切
