甜菊甙是从菊科植物甜叶菊中提取、精制的甜味物质,为白色、类白色粉末或结晶,味极甜。我国确认甜菊甙可作为药用辅料利用于医药工业。 1.甜菊甙的特性 (1)甜菊甙显甜味效果较持久,甜度为蔗糖的200倍。 (2)对热、酸、碱稳定,在一般加工条件下,不变色,不变味,在pH3~10范围内使用不分解。 (3)与蔗糖相比,相同甜度的甜菊甙所含热量
