目的:调查了解大型会议饮食保障人员影响食品安全操作的认知错误情况及相关因素。方法:选取承担某大型会议饮食保障人员251例,在会议前期进行卫生基础知识培训,培训后调查存在的影响食品安全操作的认知错误。结果:7种认知错误对饮食保障人员行为有制约作用,其中饮食保障人员不足、时间紧和同事错误操作行为是主要的认知错误。在饮食保障人员不足、时间紧等方面,女性的认知错误率均显著高于男性(P<0.05);不同饮食保障岗位中,服务员的认知错误率非常显著高于厨师(P<0.01)。结论:影响食品安全操作最重要的认知错误是饮食保障人员不足、时间紧和同事错误操作行为,应采取针对性干预措施规范饮食保障人员的操作行为。
Objectives: To investigate the cognitive errors and related factors affecting the food safety operations of food security workers at large conferences. Methods: Select 251 people who took part in a large-scale conference food security, conducted basic health knowledge training in the early stage of the conference, and then investigated the cognitive errors that affect the operation of food safety after the training. Results: Seven kinds of cognitive errors had a restrictive effect on the behavior of food security workers. Among them, inadequate dietary security personnel, tight time and the wrong operation of colleagues were the major cognitive errors. The perceived error rate of women was significantly higher than that of men (P <0.05) in the aspects of lack of diet support staff and time, and the attendants’ perceived error rate was significantly higher than that of chefs (P <0.01) . Conclusion: The most important cognitive errors that affect the operation of food safety are inadequate dietary protection staff, tight schedule and mistaken behavior of colleagues. Targeted interventions should be taken to standardize the operational behaviors of food security workers.
