目的了解吉林省市售拉皮、粉皮食品中铝的残留量,为食品安全风险评估提供基础资料与科学依据。方法从吉林省内的部分大型超市、农贸市场随机采集粉皮64份、拉皮66份,用GB/T5009.182-2003铬天青S比色法检测其铝的残留量。结果 64份粉皮样品中铝含量合格率为92.19%;66份拉皮中铝含量合格率为56.06%,最高值为353.77mg/kg;不同销售场所的拉皮样品铝残留量超标率在38.46%~47.50%之间,两者差异无统计学意义(P>0.05)。结论现有《淀粉制品卫生标准》(GB2713-2003)不能准确评价淀粉类制品的卫生质量,需进一步修订。
Objective To understand the residual amount of aluminum in the commercial rapeseed and vermicelli products in Jilin Province and provide the basic information and scientific basis for food safety risk assessment. Methods 64 samples of powdery skin and 66 samples of skin were randomly collected from some large supermarkets and farmers’ markets in Jilin Province. The residual amount of aluminum was determined by the colorimetric method of GB / T5009.182-2003. Results The pass rate of aluminum content in 64 samples was 92.19%. The pass rate of aluminum in 66 samples was 56.06% and the highest value was 353.77 mg / kg. The exceeding rate of aluminum residues in samples was 38.46% ~ 47.50%, the difference was not statistically significant (P> 0.05). Conclusion The current “Health Standards for Starch Products” (GB2713-2003) can not accurately evaluate the health quality of starch products, which needs further revision.
