在你不经意的切、刨、摘折丢弃之后,很多营养进了垃圾桶。如何巧思运用它们?近年来万物飞涨,餐饮业者的成本空间小,纷纷开始学着利用不够漂亮而遭丢弃的食材,包括蔬菜的叶、梗与皮等等。但一般家庭并不懂得食材特性,常因惯性或不知何用而丢弃。其实,蔬菜水果成长皆有其道理,包括被削下来的皮、摘除的叶子、根与茎等都有营养。
