一、前言草菇是我国食用菌商品生产中主要品种之一。我们曾测定了上海、广东、福建三地收购规格草菇的总氮,结果含氮量相当高。据1983年蔡泽民报道,鲜草菇的真蛋白质2.69%,若改成按千重计算则为36.85%,氯基酸总量9.28%,其中必需氨基酸3.06%,它们分别占蛋白质的25.18%和8.3%。这意味着将测出草菇的总氮量换算成蛋白质含量后,其中有74.82%不是氨基酸组成的蛋白质。国外有人报道,草菇的蛋白质含量为28.5%,
I. Introduction Straw mushroom is one of the main varieties of edible mushrooms in China. We have determined the total nitrogen content of straw mushrooms purchased in Shanghai, Guangdong and Fujian, resulting in a very high nitrogen content.
