在中国,饮食早已超越了生存的需要,上升到满足精神上的需求,它如同绘画、音乐一样,有着丰富多样的形式以及优雅深厚的审美意境。福建名厨胡满荣认为,菜肴不仅要讲究色、香、味俱全,还要重视菜的视觉形象所带来的优美意境,以此满足人们精神上的快感和对现实生活的体味和享受。每道菜都要有一个故事,都要有文化作为支撑,承载一定的文化内涵。
In China, diet has already surpassed the need of survival and has risen to meet the spiritual needs. It has the rich and varied forms as well as the elegant and deep aesthetic conception like painting and music. Fujian chef Hu Man-rong believes that the dishes should not only pay attention to the color, smell and taste, but also attach importance to the visual image of the dishes brought about by the beautiful mood, in order to meet people’s spiritual pleasure and appreciate the real life and enjoyment. Each dish should have a story, must have culture as a support, bearing a certain cultural connotation.
