依据我国、我军有关食堂卫生的规范性文件,查阅国内外有关标准,参照国内不同地区、不同条件下的调查结果,结合作者对部分地区驻军食堂的监测数据,制定了《军队食堂卫生管理规范》(以下简称“规范”)。本规范规定了食堂的微小气候、空气质量、照度卫生标准;并对食堂的设计、卫生设施和卫生管理提出了要求。本规范的制订,为提高炊管人员卫生素质,改善食堂卫生状况,加强食堂卫生管理,降低肠道传染病发病率,保证指战员健康等方面,提供了科学的、规范化的卫生管理依据。
According to our country’s normative documents on canteens’ health, referring to the relevant standards at home and abroad, referring to the survey results under different conditions and in different parts of China and combining with the author’s monitoring data on garrison canteens in some areas, the “Code of Military Hygienic Management ”(Hereinafter referred to as“ norms ”). This code stipulates the microclimate, air quality and illumination standard of canteens. It also sets requirements for the design, sanitary facilities and sanitation management of canteens. The formulation of this code provides a scientific and standardized basis for health management in order to improve the hygiene quality of cook-management staff, improve the health status of canteen, strengthen the canteen health management, reduce the incidence of intestinal infectious diseases and ensure the health of officers and soldiers.
