目的通过对CDC食品卫生检验项目调查,了解云南省CDC食品卫生检验的现状,结合当前实际,探索食品理化检验实践教学改革。方法对云南省各级CDC食品卫生检验项目进行问卷调查。结果因先进仪器设备缺乏、专业技术人员不足、检验方法陈旧,食品卫生检验项目开展不容乐观,特别是食品添加剂检验、有毒有害物质检验项目的开展严重不足。结论食品理化检验实践课程的开展应以基础项目为主,提高检验方法与手段。
Objective To investigate the status quo of CDC food hygiene inspection in Yunnan Province based on the investigation of CDC food hygiene inspection items and to explore the practical teaching reform of physical and chemical inspection of food in light of the current situation. Methods A questionnaire survey was conducted on CDC food hygiene inspection programs at all levels in Yunnan Province. The results due to the lack of advanced equipment, lack of professional and technical personnel, testing methods obsolete, food hygiene inspection project is not optimistic, especially food additives testing, testing of toxic and hazardous substances seriously underdeveloped. Conclusion The course of physical and chemical testing of food should be based on basic projects to improve the testing methods and means.
