河鲀又名河豚,广东称乖(龟)鱼、鸡抱鱼。我国沿海各地及长江下游一带均有出产,年产量不下万吨。河鲀肉味鲜美,营养丰富,素为广大群众所喜食。但河鲀含有剧毒,误食未加处理或处理不彻底的河鲀,会引起中毒,甚至危及生命,过去各地都有中毒和死亡病例报告;因此寻找破坏河鲀毒性的方法,对于保障人民生命安全,充分利用水产资源,有着重要的意义。根据国内外报告:日晒、盐醃和一般的炒煮烹调均不能去除河鲀的毒性,唯加热120℃,20-60分钟,
