德州扒鸡具有悠久的历史,驰名中外,深受大家喜爱,其销售量一直居高不下。为了解我区市售扒鸡的卫生现状,以便监督管理,确保其卫生质量,保障市民身体健康,我们于2000年4月对我区市售扒鸡进行了一次卫生学调查。1 材料与方法1.1 调查方法 根据事先拟定的调查表,调查经营者有无卫生许可证、健康证、销售场所卫生状况,从业人员卫生知识等,抽查样品进行检验。1.2 评价依据 散装扒鸡依据GB 2726—1996酱卤肉类卫生标准执行,真空扒鸡依据GB 13100—1991肉类罐头食品卫生标准
