氯漂白面粉产生的氯化脂质对生长的大鼠有毒。放射性同位素研究证明油酸氯化后可降低其吸收率10~15%,而面粉中脂质的氯化也可使其吸收降低15~20%。为了验证这一事实,作者在经口给予大鼠。~(36)Cl_2及常态氯氯化的油酸、亚油酸、亚麻酸及其甘油三酯并同时给予[~3H]油酸后,测定其吸收和代谢的影响。作者选用24只100g重的雄性Wistar大鼠按体重分成6个组。将每15微居里~(36)Cl的脂肪酸或其甘油三酯加入含150微居里~3H油
Chlorinated lipid produced by chlorine bleached flour is toxic to growing rats. Radioisotope studies have shown that oleic acid chlorination can reduce its absorption rate of 10 to 15%, while the lipid in the flour can also reduce its absorption by 15 to 20%.
