金针菇又名毛柄金钱菌、构菌、冬菇等。它含有丰富的营养,是高蛋白、低脂肪的食品,有增强智力的作用,并兼有药用功效。但在北方自然气候条件下,金针菇一般仅在早春晚秋栽培,若选用地下室、防空洞、山洞进行种植则可周年生产。这种场所的共同特点是低温、湿度偏大、弱光照或无光照、二氧化碳浓度偏高等。这种环境条件比较适合金针菇栽培,但在栽培的不同阶段,还应根据金针菇的生理特性,处理好各因素之间的关系。现将其栽培技术分述如下:
