“潇湘”是湖南的别称。早在公元前300多年的战国时期,伟大的爱国诗人屈原在他著名诗篇《招魂》里,就叙述了古代潇湘的许多美馔佳肴。从长沙马王堆的西汉古墓中,出土了一份迄今为止保存最为完整的竹简菜单,其中罗列了潇湘103种名贵菜品和9大类烹饪方法。可见在当时,潇湘的烹饪技术就已达到了相当高的水平。经过漫长的岁月和历代美食家、厨师们的共同努力,如今潇湘的烹饪技艺更加精湛,潇湘的肴馔也更加丰富。这里列举三款潇湘名馔的制法和趣事,以飨读者。
