大蒜不仅营养成分相当丰富，还具有很好的食疗和药用价值，应用前景非常广阔，国内外市场竞争非常激烈，而竞争的焦点之一就是鳞茎的质量。但大蒜鳞茎采后经历60～80天的休眠期后，鳞芽开始萌动，伴随着一系列的物质代谢活动，会导致大蒜鳞茎干物质含量下降，品质恶化。因此，合理的贮藏与保鲜更为重要。
