目的回顾分析一起因乔迁喜宴引起的食物中毒事件发生原因,为指导食物中毒调查处置工作提供依据。方法通过个案调查、病例对照研究、现场卫生学调查及实验室检测等开展事件调查工作。结果本次事件患病50例,主要症状为腹泻50例(100%)、腹痛45例(90%)、恶心37例(74%)、呕吐26例(52%),可疑食物追踪发现西芹炒鲜鱿、木耳炒淮山、文蛤绿笋汤、黑椒脆鹅柳4种食物病例组和对照组差异有统计学意义(χ2=9.72、6.45、7.43、7.25,P<0.05),咸水鸭、清蒸多宝鱼、西芹炒鲜鱿3种剩余食品及2份病例生物标本中检出副溶血性弧菌。结论本起事件是由副溶血性弧菌引起的食物中毒,可疑食物为西芹炒鲜鱿,事件原因为食物加工不当及交叉污染。
Objective To review and analyze the causes of food poisoning incidents caused by the moving wedding banquet, and provide the basis for guiding the investigation and disposal of food poisoning. Methods Incident investigation was carried out through case investigation, case-control study, on-site hygiene investigation and laboratory test. Results Fifty patients were diagnosed with this disease. The main symptoms were 50 cases of diarrhea (100%), 45 cases (90%) of abdominal pain, 37 cases (74%) of nausea and 26 cases (52%) of vomiting. There were significant differences between the four food groups (control group) and the control group (χ2 = 9.72,6.45,7.43,7.25, P <0.05), saltwater duck , Steamed polyp, celery fried squid 3 kinds of surplus food and 2 cases of biological specimens detected in Vibrio parahaemolyticus. Conclusion The incident was caused by Vibrio parahaemolyticus food poisoning, suspicious food is celery fried squid, the incident because of improper food processing and cross-contamination.
