[目的]了解餐饮业公用食(饮)具的卫生状况。[方法]对2005~2007年周村区所辖餐饮单位公用食(饮)具消毒效果监测资料进行分析。[结果]2005~2007年合计检测2 690家(次)餐饮单位的食(饮)具21 529份,合格的12 366份,合格率为57.43%,2005~2007年分别为56.76%、57.34%、58.02%(P>0.05)。2005~2007年食(饮)具平均合格率,餐厅、制作室的分别为40.21%、64.37%(P<0.01);1~4季度的分别为63.12%、45.09%、53.54%、67.68%(P<0.01);大型、中型、小型餐饮单位分别为91.05%、50.36%、22.87%(P<0.01);餐具、饮具合格率分别为58.96%、46.62%(P<0.01)。[结论]周村区餐饮业食(饮)具合格率较低,小型单位食(饮)具消毒存在较多问题。
[Objective] To understand the sanitary status of common food (drink) in catering industry. [Method] The monitoring data of disinfecting effect of common food (drink) in catering units under the jurisdiction of Zhoucun District from 2005 to 2007 were analyzed. [Results] A total of 21 529 food and beverage samples were obtained from 2 690 catering establishments in 2005-2007, with 12 366 qualified ones passing the test with a pass rate of 57.43% and 56.76% and 57.34% respectively from 2005 to 2007. , 58.02% (P> 0.05). From 2005 to 2007, the average passing rate of food and drink was 40.21% and 64.37% respectively (P <0.01). The average rates of food and drink in the first four quarters were 63.12%, 45.09%, 53.54% and 67.68% respectively P <0.01). The large, medium and small catering units were 91.05%, 50.36% and 22.87% respectively (P <0.01). The passing rates of tableware and tableware were 58.96% and 46.62%, respectively. [Conclusion] The food and drink (drinking) in Zhoucun District had a low pass rate and there were many problems in the disinfection of food and drink in small units.
