黑茶渥堆发酵中有酶活性的复升现象,这是无可非议的,但复升的原因至今仍无详细深入地研究,为了阐明这一理论问题的实质我们在1963年5—6月进行了以下的研究。 测定室温28°—32℃相对湿度79—84%。用过氢化氢酶活性用氧容量法,取湿样5克,4%过氧化氢5毫升持续时间5分钟。微生物有明显菌群的茶胚以蒸馏水洗涤,用1,500倍生物显微镜进行镜察。现将研究方法及其结果简述如后:
