目的探讨醋酸对冻鸡分割品中EHECO157:H7耐酸性的影响。方法通过用2%醋酸对EHECO157:H7污染的冻鸡进行喷洒、浸泡一定时间,然后在4℃和-25℃贮藏,研究EHECO157:H7在喷洒和浸泡后的冻鸡分割品中对酸的耐受时间,抵抗酸性较强的EHECO157:H7随着时间变化,观察其受酸影响的程度。结果在处理受EHECO157:H7污染的冻鸡分割品时,增加2%醋酸的量和处理时间,并且及时将样品保存在-25℃,完全可以降低EHECO157:H7对冻鸡分割品的污染程度。结论在合理使用各种消毒措施的同时,采取这个对食品感官和人体健康无害的方法,来预防和控制EHECO157:H7对食品和环境的污染,是切实可行的。
Objective To investigate the effect of acetic acid on the acid resistance of EHECO157: H7 in chickens.
