黔系饮食作为贵州文化的外部表征,代表了贵州民族多样性、地貌多样性、文化多样性等基本要素,因而黔系饮食在选材上具有独树一帜的鲜明风格。如何在黔系饮食的发展和传承过程中找到自己的思路,如何实现后发菜系的良性发展和有效传承是黔系饮食这一餐饮文化品牌向外推广过程中需要厘清的核心问题。黔系饮食在远期发展过程中必须走上自我良性发展的道路,而编订黔系饮食名菜名师目录,建立并完善基于黔系饮食原材料特定生产加工方式的原产地法律保护体系和预警机制则是保障黔系饮食这一新兴产业健康发展的有力后盾。
