大蒜(Alium sativum)又名胡蒜、葫、独蒜、独头蒜,原产胡地(北方和西域)。自汉代张骞出使西域,将大蒜引种内地,至今已有两千多年的历史。现在我国各地均有栽培,山东金乡被称为“中国大蒜之乡”。大蒜为百合科多年生草本植物,全株具强烈蒜臭气。地下具球状至扁球状鳞茎,大者直径可在5厘米以上。大蒜叶基生,扁条形。花茎实心,高可达60厘米。伞形花序密具珠芽,花淡红色,种子黑色。花期5～6月,果期6～7月。大蒜的收
