目的了解部队餐饮人员的基本情况和对饮食卫生、营养烹调知识的掌握情况,为餐饮人员的营养健康教育提供依据。方法自行设计问卷调查表,对某部餐饮人员进行现场调查。结果饮食卫生知识整体掌握较好;对营养烹调知识的掌握不够全面,尤其对于食盐、高蛋白食品的食用以及对素食观念的认识存在较严重的误区;文化程度、饮食卫生及营养知识培训是提高餐饮人员饮食卫生和营养烹调知识水平的促进因素。结论提高餐饮人员自身文化素养、强化营养烹调知识的健康教育是至关重要的。
Objective To understand the basic situation of troops catering staff and grasp the knowledge of diet hygiene and nutrition cooking, and provide the basis for nutrition and health education of catering staff. Methods Self-designed questionnaire, on-site investigation of a restaurant staff. Results The overall mastery of diet hygiene knowledge was good. The mastery of nutrition knowledge was not comprehensive enough. Especially for the consumption of salt and high protein foods and the understanding of vegetarian concepts, there were more serious misunderstandings. The educational level of literacy, diet hygiene and nutrition knowledge was increased Catering workers promote the level of knowledge of dietary hygiene and nutrition cooking. Conclusion It is very important to improve the health literacy of catering personnel and enhance the health education of nutrition and cooking knowledge.
